Varieties worth growing
Genovese
commonThe basil. Big, fragrant leaves with that unmistakable sweet, peppery aroma that transports you to Italy the moment you brush past the plant. The one for pesto, for Caprese, for tearing over everything in August.
Classic pesto
Blitz basil leaves with garlic, pine nuts, parmesan, and olive oil. Don't over-process — a bit of texture is good. The only rule is to use it generously.
Caprese salad
Thick slices of tomato, torn mozzarella, whole basil leaves, olive oil, and nothing else. When the basil is this fresh and the tomatoes are this good, restraint is the whole point.
Thai Basil
uncommonAnise-scented with purple stems and a flavour nothing like Italian basil. The one that makes curries, stir-fries, and pho taste authentic. Sturdier than Genovese — holds its flavour when cooked instead of wilting into nothing.
Thai basil chicken (pad kra pao)
Stir-fry minced chicken with garlic, chilli, and a sauce of soy, fish sauce, and oyster sauce. Toss in handfuls of Thai basil at the last second. Serve over rice with a fried egg. The basil wilts into the sauce and perfumes everything.
Purple Ruffles
rareDeep purple, ruffled leaves that look dramatic in the pot and on the plate. Slightly more clove-like than green basil, with a flavour that works in both Italian and Thai directions. Makes the most beautiful pink basil vinegar you've ever seen.
Purple basil vinegar
Pack a jar with purple basil leaves, cover with white wine vinegar, seal, and leave for two weeks. The vinegar turns a stunning deep pink. Strain and use in dressings. Edible alchemy.
Greek Basil
commonTiny leaves on a compact, mound-shaped plant that looks like a tidy green dome. Intense flavour packed into small leaves, and the bushy shape means it doesn't go leggy and sad like Genovese often does. The basil for windowsills and pots.
Greek salad with basil
Chunk tomatoes, cucumber, and pepper. Add olives, feta, red onion. Dress with olive oil, lemon juice, and torn Greek basil leaves. The small leaves scatter beautifully over the top and the compact flavour is intense.
