Anise-scented with purple stems and a flavour nothing like Italian basil. The one that makes curries, stir-fries, and pho taste authentic. Sturdier than Genovese — holds its flavour when cooked instead of wilting into nothing.

Thai basil chicken (pad kra pao)
Stir-fry minced chicken with garlic, chilli, and a sauce of soy, fish sauce, and oyster sauce. Toss in handfuls of Thai basil at the last second. Serve over rice with a fried egg. The basil wilts into the sauce and perfumes everything.
