First early, ready in June, and there is absolutely nothing like digging your first potatoes of the year. Small, thin-skinned, and they taste like actual potatoes in a way that supermarket ones simply don't.

Crushed new potatoes with mint butter
Boil until tender, crush lightly with a fork, then toss with mint-flecked butter and flaky salt. The skins are so thin they almost dissolve. June on a plate.
